Marys Cakes

We use xylitol in the bakery when we need a sugar substitute and it works great! Try it 50-50 first, then add a little more. It is sweeter than sugar so you should not need as much. Agave nectar also works well, but its expensive. Maybe a little juice and a little xylitol to get keep it moist.

I like most pies but rubarb is one of my favorites and as rubarb grows wild in my area I may try it again. My problem is sugar but maybe I can use 1/2 sugar and 1/2 sugar substitute. It wouldn't hurt to try it.


My mother used to make rhubarb pie and I loved it. I am able to procure rhubarb that grows wild once it is started so will give your recipe a try.
